Foodibox Dorset Cheese-ebox selection consists of: Dorset Blue Vinney a hard, crumbley cheese.Is a traditional blue cheese made near Sturminster Newton in Dorset, England, from skimmed cows' milk. "Vinney" is a local Dorset term related to the obsolete word "vinew", which means to become mouldy. Coastal Cheddar 360g is matured at the Ford Farm Dairy located on the world heritage Jurassic Coast line in the salty sea air. Aged for a minimum of fifteen months, Coastal is often characterised with a distinctive crunch – a result of the calcium lactate crystals which form naturally in the cheese as it matures. Dorset Red is created in the same way that Ford Farm makes its traditional cheddar, using milk sourced from local grazing herds and with the process conducted predominantly by hand. However, the heat of the milk is lowered and less stirring is done, resulting in a milder flavour as well as a softer texture. It is pressed into block moulds and left to mature for around three months. Dorset Red is then cold-smoked over oak chips, overnight, which bestows it with its distinctive, mellow, smoky flavour. Dorset Red has achieved several medals over the years. Cranborne Camembert A soft, white, mould-ripened cheese in a traditional 'Camembert' shape, available as a minimum weight 240g individual cheese Made using unpasteurised cow's milk and traditional animal rennet, this cheese has a wonderful creamy texture inside when ripe, that does not tend to run. The thin white rind has a wonderful 'mushroomy' aroma. Dorset White A soft, white, mould-ripened cheese in a small 'log' shape, available as a 200g individual cheese. White is made using unpasteurised cow's milk and traditional animal rennet. The thicker 'log' - shape of the cheese allows for an even creamier, stronger paste, just under the rind when ripe, whilst at the same time retaining a slightly firmer tangier centre. Rosary Goats Cheese log 100g creamy goat's cheese with a mousse-like texture and a natural acidity. Recent winner of the Supreme Champion Award at the British Cheese Awards 2014. It is made from pasteurised milk, using a microbial rennet, which makes it suitable for vegetarians. Just enough salt is added to enhance its unique flavour, we also product other popular flavours including garlic and herb cheese.
